Bern’s Steak House will host an intimate Right Bank Bordeaux Dinner in the Bordeaux Room, welcoming just forty guests for an evening devoted to the great estates of Saint-Émilion and its neighboring appellations. Join us for a thoughtfully curated exploration of some of Bordeaux’s most distinguished châteaux. Executive Chef Chad Johnson, Chef de Cuisine Brent Hunt, and Pastry Chef Hannah Thomas will present an extravagant menu specifically to complement the wines.
Guiding the evening is Nils Vaincot, Sales Director of Château Quintus, who will share insight on the estate’s philosophy, terroir, and evolution within the Saint-Émilion classification. The wine lineup moves gracefully from Right Bank whites into a remarkable progression of mature and benchmark vintages, including 1961 Château Grand-Pontet, 1982 and 1985 Château Canon, 1999 Château Pavie and Château Cheval Blanc, and 2015 Château Quintus, culminating with a 2009 Secret de Château Biac library release in magnum, introduced by none other than Gabriel Asseily, Owner and Winemaker of Château Biac. It is an evening centered on provenance, age-worthiness, and the quiet thrill of tasting history in the company of those who steward it.

The Laxer Family Foundation is a charitable foundation that provides the opportunity to raise money through events that foster a more inclusive and cooperative youth culture while cultivating the advancement of the next generation of culinary leaders through scholarships. Since 1997, Bern’s Winefest has been the main fundraising event for the Bern Laxer Memorial Scholarship. The Careers through Culinary Arts Program (C•CAP) selection process awards funds to individuals from the state of Florida for culinary and job skills training in food and hospitality. A portion of the proceeds raised through this event will go directly to the Bern Laxer Memorial Scholarship Fund. Nils Vaincot
Sales Director, Château Quintas
Mr. Nils VAINCOT is originally from Bordeaux and completed his entire academic journey in his hometown. He holds a Specialized Master's degree in international wine and spirits distribution from INSEEC Business School and KEDGE Business School.
From a young age, Nils helped his grandfather with various tasks in the vines he owned in the Médoc. This sparked his passion for the land and wine. Since then, he has never left the industry.
He began his career by developing sales at a family-owned Bordeaux property, Château de Reignac. He later joined the CHANEL group and its wine merchant company, ULYSSE CAZABONNE, affiliated with the group.
He had the opportunity to promote and sell some of the finest wines from Bordeaux and around the world to an international clientele. He had the opportunity to join Maison Dourthe to represent the eight vineyards owned by the group, particularly focusing on a property located in the Pessac-Léognan appellation, where he developed the sales and hospitality strategy.
Nils joined DOMAINE CLARENCE DILLON in October 2024 as Sales Manager for CHÂTEAU QUINTUS.
